CHEYENNE - A new restaurant is scheduled to open early next month at the Cheyenne Regional Airport.

The Peaks Cafe at the Airport II will offer breakfasts, lunches and beverages for passengers, visitors and airport employees.

This will be the first restaurant at the airport in several months.

The airport board voted unanimously Wednesday to approve a lease with the restaurant pending a review of financial information.

Rose Iversen and Carole Peck told the board about their business. The women and their husbands, John Peck and Zane Iversen, will run the restaurant.

They operate a similar restaurant in Loveland, Colo., and one at the Fort Collins-Loveland Airport near Loveland. They have operated the airport restaurant for nine years.

The restaurant at the Cheyenne airport terminal will feature salad, potato and fruit bars. Breakfasts will include burritos and homemade baked goods.

Lunches will feature an assortment of sandwiches, including Philly steak sandwiches, hot dogs, brats and soups.

The restaurant area will be housed in the former coffee shop section at the airport terminal. Sit-down dining will be available.

The restaurant will hire area residents.

The airport plans to turn a portion of the old restaurant into a "meeter-greeter" waiting area, said Airport Manager Dave Haring.

This section has windows that look out on the airport runway. The new waiting area will have couches and chairs, depending on how much can be budgeted, Haring said. The restaurant staff can serve patrons in this section as well.

Airport board member Kevin Painter said the restaurant operators understand airport operations, given their experience in Colorado.

The owners have applied for a restaurant liquor license. The restaurant will not focus on its bar, however. It's just a way to bring in money, according to Rose Iversen.

The airport board proposes charging $5.37 a square foot to rent the restaurant space, or about $4,757 a year. The cost will increase in the second year to $10.75 a square foot, or about $9,525 a year.
